It’s hardly a recipe but a fruit salad is the easiest pudding as there isn’t any cooking. It is a fact universally acknowledged in our household, that if I say, there’s the fruit bowl for pudding, no one is that interested. But if the fruit is cut up and arranged prettily on a platter, then it all gets eaten. I don’t use a sugar syrup or any sugar at all, and this way, the fruit doesn’t get soggy. If there’s any fruit left, it can be put in a plastic box in the fridge and eaten later on.
It’s easy to cut it up, even if sitting at a table and then to arrange it in layers of each fruit, dotting it around the plate. This is a selection of ones I have made in the past.
