This avocado and prosciutto salad can be assembled so quickly if you have the ingredients in the fridge. It shows the importance of shopping and the prosciutto or any other type of dried ham such as Serrano or Parma will last quite a while if you want to stock up in advance of an operation. And a little goes a long way.

INGREDIENTS
One avocado, stoned and sliced
70g pack Serrano ham
Handful cherry tomatoes, halved
5cm chunk of cucumber, halved and sliced
Handful rocket or salad leaves
Tbsp pinenuts
Olive oil
Squeeze lemon juice
METHOD
Heat a frying pan gently and toast the pinenuts for a few minutes until they are golden brown.
Arrange the avocado, ham, tomatoes, cucumber, and rocket on a platter.
Sprinkle with the pinenuts, season and drizzle over some olive oil and lemon juice just before serving.
